At Borgo4case, Tuscany, we apply the principles of Permaculture, in the 5000sqm of land we cultivate numerous species of plants from which we get many products. In the orchard this year there was a large production of apples, but due to a thunderstorm, many have fallen. Since they are a bit buggy and some are unripe, I decided to use them for self-production of apple cider vinegar.
Apple cider vinegar is easy to make and essential for a thousand uses at home, not only for food, but also for cleaning the house and body care, let’s see together how to make apple cider vinegar at home. I recommend doing it, it’s easy and success is always guaranteed!
Ingredients for making homemade apple vinegar:
To make apple cider vinegar you need lots of apples, a little bit of ready-made vinegar (optional, to speed up the fermentation process), a centrifuge or an extractor to get the juice.
How to make apple vinegar:
Wash the apples well, remove the core and the rotten parts, cut into pieces, centrifuge the apples with the peel (it is important because it helps to activate the fermentation). Put the apple juice in a large glass container and add a tablespoon of vinegar to start the fermentation process. Cover the container with a cloth so that the air passes and the fermentation process starts. Leave the juice to rest for a couple of weeks and then strain to remove impurities.
It is possible to flavor the vinegar with herbs. I made a version with rosemary, lavender and rose petals. I collected a few sprigs of rosemary and fresh lavender flowers and placed them in glass jars with vinegar. Plants release their essential oils giving a pleasant vinegar scent. Flavored vinegar is good in cooking and excellent used diluted on the hair, as an illuminator and degreaser. I keep it in the fridge until I strain to use it.
